Good Soup

Every once in awhile, I feel like experimenting with food.

My estranged wife (for lack of a better phrase), made the most incredible butternut squash soup, which I’ve missed quite alot this winter season, especially the past few days where it’s been absolutely frigid outside.

I’m not a bad cook, but I’m by no means a fabulous cook either, so I tend to eat quickly prepared meals.

Today, at Wild Oats, I picked up some Creamy Butternut Squash soup from Imagine Foods, some Butternut Squash and Vermont maple syrup ravioli from Putney Pasta some boneless-skinless chicken breasts, and some garam masala spices.

Sautéed the chicken in olive oil, with sea salt, finely ground black pepper, and the masala spice, and threw it and the ravioli into the soup. Let it simmer on the stove top for a while to further tenderize the chicken, and cook the pasta, and dished it up.

Good flavor, and oh, so warming on a day when the temperature outside barely got out of the single digits.

Supposed to be warmer tomorrow, especially at altitude, so the plan is early to bed, early to rise, and early up Big Cottonwood to hit Solitude for the first time this season.
